Cornbread

About 9 slices. 40 minutes to serve.
  1. Oven to 400F
  2. Grease an 8“ square pan
  3. Mix:
    1. 1 1/4 cups flour
    2. 1 cup cornmeal
    3. 2/3 cup sugar
    4. 1 tsp salt
    5. 1 Tbsp baking powder
  4. Add:
    1. 1 1/4 cups milk (usually coconut)
    2. 1/3 cup neutral oil (usually canola)
  5. Mix well, pour into pan, bake 25-30 minutes

A toothpick should come out clean, and it shouldn't jiggle in the pan. Let it cool a little before cutting.

Pair with crockpot beans and stewed garlicky kale.
