Pumpkin Bread
1H15. Makes one 6×9 loaf.
Oven to 365F
Mix dry:
1.75 cups flour
Heaping 0.5 cup powdered sugar
0.25 cup brown sugar
2.25 tsp baking powder
0.25 tsp baking soda
0.25 tsp salt
1.5 tsp cinnamon
0.125 tsp ground cardamom
0.125 tsp ground cloves
0.25 cup chopped pecans
0.5 cup chocolate chips
Add wet:
1 cup + 2 Tbsp pureed pumpkin
0.5 cup coconut milk
4 Tbsp canola oil
1 Tbsp molasses
1 tsp lemon juice
Mix well, add more coconut milk if needed. Should be a thick batter.
Grease and flour loaf pan, pour in batter, tap hard on counter to remove air bubbles.
Bake 1 hour.
Cool 15 minutes before removing from pan, another 15m before slicing.
