Jalapeño Cilantro Pesto

- Soak 1/2 cup cashews in hot water for 30 minutes. Drain. - Throw the cashews in a food processor with:

  1. 1 cup fresh cilantro
  2. 3 Tbsp lemon juice
  3. 3 peeled cloves raw garlic
  4. 1/2 small jalapeno, seeded
  5. 1/2 tsp salt
  6. 1/3 cup olive oil

- Pulse until ingredients are minced and well mixed.

Put on everything. Especially good tossed with roasted veggies.
