Jalapeño Cilantro Pesto

  • Soak 1/2 cup cashews in hot water for 30 minutes. Drain.
  • Throw the cashews in a food processor with:
    • 1 cup fresh cilantro
    • 3 Tbsp lemon juice
    • 3 peeled cloves raw garlic
    • 1/2 small jalapeno, seeded
    • 1/2 tsp salt
    • 1/3 cup olive oil
  • Pulse until ingredients are minced and well mixed.

Put on everything. Especially good tossed with roasted veggies.
