Cranberry Coffee Cake
8“ square pan. 75 minutes.
Oven to 350F.
Grease an 8” baking dish, set aside.
Make the streusel. Mix:
1/4 cup flour
1 cup chopped pecans
1/2 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
Melt 3 Tbsp vegan butter, add to the dry ingredients and mix until crumbly. Set aside.
Dry mix:
2 cups flour
1/2 cup sugar
1/4 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Wet mix:
1/2 cup canola oil
1 cup nondairy milk (coconut/almond)
1 Tbsp apple cider vinegar
Zest of 1 orange
Pour wet into dry and mix until just combined.
Fold in 2 cups fresh cranberries.
Pour batter into baking dish and cover with streusel.
Bake 50+ minutes, until a tester comes out clean.
