====== Cranberry Coffee Cake ====== > 8" square pan. 75 minutes. - Oven to 350F. - Grease an 8" baking dish, set aside. - Make the streusel. Mix: - **1/4 cup flour** - **1 cup chopped pecans** - **1/2 cup brown sugar** - **1 tsp cinnamon** - **1/2 tsp nutmeg** - Melt **3 Tbsp vegan butter**, add to the dry ingredients and mix until crumbly. Set aside. - Dry mix: - **2 cups flour** - **1/2 cup sugar** - **1/4 cup brown sugar** - **1 tsp baking soda** - **1 tsp baking powder** - **1/2 tsp salt** - Wet mix: - **1/2 cup canola oil** - **1 cup nondairy milk (coconut/almond)** - **1 Tbsp apple cider vinegar** - **Zest of 1 orange** - Pour wet into dry and mix until just combined. - Fold in **2 cups fresh cranberries**. - Pour batter into baking dish and cover with streusel. - Bake 50+ minutes, until a tester comes out clean. === Variants === * Sub lemon zest and blueberries for orange zest and cranberries.
